I just made Summer Chicken, oven roasted potatoes and brown rice. The chicken was lightly salted and peppered before being put in a marinade of lemon juice (1/2 cup), Italian Seasoning (2 Tbsp), minced garlic (1 tsp) and onion powder (1/2 tsp). I also saved a little of the marinade to mix in with the brown rice after cooking it. The potatoes were tossed in a mixture of lemon juice, olive oil (minimal), italian seasoning, and garlic powder and roasted in the oven for 45-60 minutes on 400 degrees ferenheit.
Pretty delicious but I havent figured out my Macros yet to get everything measured. Just curious to what you all thought about this meal.
