I recently took a week's break due to illness, I came back this Monday and smashed a push workout and it's now Thursday and my Triceps are still kinda sore. Can I still train them today?

You are experiencing DOMS - Delayed Onset Muscle Soreness. This is caused when you do deeper damage to muscle fibers. Whenever you have not been able to lift due to illness or time off or have just started lifting, you will experinence DOMS to some degree. It would be OK to train triceps lightly but I would not push them hard or train heavy - including other exercises where they are involved like chest and shoulders. The best resolution is rest and protein.
